I had fried tofu last night at a restaurant. Yumm--eeee! I often forget how good tofu is because I never cook it. My tots never took to it when little, though friends of mine managed to get their kids to eat it by the truckload. I think I'm going to give it another shot with this Easy Tofu Stir Fry recipe from Cooking With All Things Trader Joe's.
That's the grocery store, BTW. A lot of the recipes do list ingredients specifically from the Trader Joe's shelves, but some are easily subbed or adapted.
Tofu (made from soybeans, so avoid if your child has an allergy) is a good source of protein with a decent dose of iron. Plus it's soft to the bite -- the ideal toddler food. It's also tasteless, so the key is to flavor it with stuff that your youngster likes.
Easy Tofu Stir Fry
Prep time: 5 mins.
Cook time: 5 mins.
You'll need:
1/2 brick regular tofu, cut into 1/2-inch thick cubes
1 tbsp. olive oil
1 tsp. toasted sesame oil
4 cups (one bag) stir-fry vegetables (Napa cabbage variety) or sub an equal amount of broccoli florets, white cabbage, and/or bok choy, and snap peas.
1/3 cup Soyaki (available at Trader Joe's), a similar product called Soy Vey, or your favorite teriyaki sauce.
Make it:
1. Heat a saucepan on high and add all oils.
2. Add tofu and stir-fry for two minutes.
3. Reduce heat to medium-high, add vegetables and sauce, and continue to stir-fry for an additional three minutes or until broccoli is bright green.
Tip: You may have to cut the veggies up into smaller pieces to get your toddler to eat them.

i'm making stir fry today =-D just not with tofu, i doubt hubby will eat it =-/
don't tell dh or the kids that it's in there until after they've tried it. odds are, they wont even relize that they are eating something healthy. tofu has no taste.
Blegh. It has a horrible texture I just can't get past and don't even get me started on soy. It's not as great as everyone thinks.
We love tofu in this family, 3 year old included. :)
