
My kids like what most toddlers like: pasta, bread, chicken fingers, applesauce. But I have to laugh at some of the more experimental fare in my children's culinary repertoire. My son will do anything for a steamed artichoke. He's elevated it to the level of treat, ha!
My 4 year old daughter absolutely loves mushrooms. Cremini is her favorite, but she gobbles up both the fresh and marinated kinds from the jar. Go figure. I was definitely thinking of my daughter when I came across this Chicken Georgia meal in Recipes. The full recipe after the jump. Thanks to maggiesmom415 for posting it!
What are some of your toddler's unlikely food loves?
Chicken Georgia
Prep time: 5 mins.
Cook time: 25 mins.
You'll need:
4 tbsp. butter
4 skinless, boneless chicken breast halves
1 cup sliced fresh mushrooms
2 tbsp. minced shallots
salt and pepper to taste
4 ounces grated mozzarella cheese
Make it:
1. Melt butter over medium heat. Add mushrooms and chopped shallots and sprinkle with salt and pepper. Cook 10 minutes.
2. Add chicken and cook 10 minutes on each side, or until tender.
3. Transfer chicken to a platter and sprinkle with grated cheese. Top with mushroom mixture.
3. Let stand 5 minutes or until cheese melts.
