Toddler Meal: Vegetarian Chili

Vegetarian Chili (Recipe from "Ready, Steady, Spaghetti")

For today's recipe I dug into a brand new kids' cookbook called "Ready, Steady, Spaghetti" ($19.99) by Lucy Broadhurst. It's so brand new that it's not even available till April. But how cool is it that I have an advance copy and can share one of the toddler-friendly recipes with you right now: Vegetarian Chili.

Betcha were expecting a pasta recipe, huh? The book does have quite a few of those, but there's also a huge variety of other goodies as well, including berry muffins, banana smoothies, lasagna, sweet chile chicken and noodles, tuna enchiladas and jam upside-down cakes.


The book not only has recipes that kids love to eat, but recipes that kids can help you MAKE, because they're pretty simple with a minimum amount of steps and ingredients. I find my toddlers love these types of meals the best.

I want to try this recipe in particular because it's soft and easy to chew, and it's packed with healthy beans, vegetables and grains.

Prep time: 15 minutes

Cooking time: 40 minutes

You'll need:

3/4 cup bulgur

2 tbsp. olive oil

1 onion, finely chopped

2 garlic cloves, crushed

2 tsp. ground cumin

1 tsp. chile powder

1/2 teaspoon ground cinnamon

2 (14-oz) can crushed tomatoes

3 cups vegetable stock

15 1/2 ounces canned red kidney beans (rinsed and drained)

15 1/2 ounces canned chickpeas, rinsed and drained

11 ounces canned corn kernals, rinsed and drained

2 tbsp. tomato paste

plain yogurt, to serve

Make it:

1. Put the bulgur in a heatproof bowl and pour in 1 cup of hot water. Leave to stand until needed.

2. Heat the oil in a large saucepan and add the onion. Cook for abut 10 minutes over medium heat, stirring occassionally, or until soft and lightly golden. Add the garlic, cumin, chile, and cinnamon, and stir-fry for 1 minutes.

3. Add the bulgur and all the remaining ingredients, except yogurt, and stir to combine. Decrease the heat to low and simmer for 30 minutes. Serve with a dollop of yogurt.
