Well, technically this one is more of a snack. Or a healthy treat for a birthday party. Or an hors d'oeuvre to serve other parents at a play date ...
Anyway, toddlers need to eat lots of produce and this Fruit Salsa With Cinnamon Crisps recipe from bupkie, mom of two boys, sounds delicious and worthy of featuring here.
As bupkie says, it sounds more complicated than it really is.
"These are absolutely DELICIOUS! It's a recipe I used to make and
serve at Tupperware parties, and it would go in an instant. I have to
make it at family functions now too!"
"The salsa is really amazing! Kids love it, even my DH loves it, and he's not a big fruit fan by any means!"
Fruit Salsa With Cinnamon Crisps
Prep time: 10 mins.
Cook time: 15 mins.
You'll need:
Salsa
2 cups of fresh strawberries
1 cup grapes
2 tbspoons apple butter (or any fruit preserves of your choice)
2 kiwis
1 apple
1/4 cup sugar
Cinnamon Crisps
1 package of flat bread wraps or flour tortilla wraps
Cooking spray
Sugar
Cinnamon
Make it:
1. Line a baking sheet with foil or parchment paper. Spray each flat bread wrap or tortilla wrap with cooking spray and sprinkle both sides well with cinnamon and sugar.
2. Bake at 350 degrees for 10-15 minutes. Remove when wrap is almost stiff, and make sure they don't burn.
3. Set aside and let cool.
4. Place the fruit in a food processor, blender or hand chopper and chop to a "chunky salsa" consistency, but not too watery.
Tip: You can add more fruit ... blueberries, raspberries, etc. This is the basic "favorite" recipe.
Tip: You can serve the salsa with graham crackers if you're in a pinch.
Check back next Thursday for another great recipe. Got a
favorite toddler friendly meal or snack of your own to share with other
idea-strapped mamas? Let me know about it and I may feature it here.

sounds like an awful lot of sugar, but I guess you can make it without.. I wouldnt consider this a "meal" though
An idea to turn it into a meal, could be to serve just the salsa mixed with plain yogurt. Or as a topping with a small bagel and a little cream cheese. You can even freeze the fruit in small snack cups, and have them eat it as a frozen treat!
We make this same thing minus the apple butter and sugar. Our whole family loves it too. It is strictly a treat at our house though. My daughter would eat her weight in it!
