Toddler Meal: Summer Sandwiches

Creative SandwichWhen school was out for the summer, I put away the lunch boxes and let out a sigh of relief that at least that chore was done for awhile. I'm not sure what I was thinking because whether I'm packing them for camps or a trip to the beach, I feel like I'm packing more lunches than ever.

For me, that means sandwiches. Lots of sandwiches. I get bored with plain old PB&J, so I've sought out other creative toddler-friendly sandwich ideas that pack well for summer fun.

Wraps. I love wraps, and so do my kids. You can put almost anything in one but if you need some inspiration, ilunchbox.com offers a whole host of ideas for vegetarian wrap combinations. My favorite: hummus, cucumber, avocado, red onion, tomato and lettuce.

Weelicious offers a recipe for a tomato and cream cheese sandwich that just screams summer. The tomatoes I've been buying lately are amazing, so the more ways to use them, the better as far as I'm concerned.

Kim offers some great ideas for hummus sandwiches. My children would eat pretty much anything if there was hummus on it, so these are a great way to disguise things they may not otherwise want to try.

If you just want to spruce up one of your tried-and-true favorites, you could always make the sandwich into a puzzle as Suzanne shows us. Fun for everyone!
