One healthy pasta dish that we eat all the time in our house is Pasta with Slow-Roasted Tomato Sauce. We roast tomatoes in the oven until they are soft, mash them with olive oil and a little garlic, and serve over pasta alongside a green salad. Very delicious, very healthy...

I cut up zucchini, squash, green peppers, and onions, and saute in a bit of olive oil. I also cut up Italian sausage in coins and add to the veggies. I add canned diced tomatoes and pour over penne pasta.
Make a batch of whole wheat angel hair pasta and toss half of the pasta with juice of a lemon, a teaspoon of olive oil, 1/4 teaspoon crushed garlic, and sprinkle with a little dill. Whip up a side salad and you're good to go...For leftovers: Toss the remainder of the pasta with a couple of teaspoons of pesto, a few pine nuts, some roasted red peppers (easy to DIY but you can buy them packed in water too), and a sprinkle of Parmesan.
Pizza Pasta: Boil 1 lb. spiral pasta until tender, drain. At the same time, saute 1/2 diced bell pepper, diced, 1/2 diced onion, and 2 cloves minced garlic until tender. Pour over pasta with 1 can diced black olives, sliced mushrooms, 1 bag of pepperonis, mozzarella to taste, Italian season to taste, and 1 jar of spaghetti sauce. Mix all ingredients in the pot, heat until warm. I serve with garlic bread.
