artichoke and crab dipAs summer approaches, so typically do a number of gatherings between family and friends. Memorial Day kicks things off, and then there are a whole host of parties and plans to look forward to -- many of which require a food contribution from you.

One of my favorite dishes to bring is this hearty appetizer from Live Pretty -- Artichoke and Crab Dip. It's rich and satisfying, but it also gets a summery twist with a pretty and delicious topping of fresh tomatoes and basil. Served with tortilla chips, it's always a hit, and it might even be all you need for a main course some nights.

mint chocolate cakeThere are cakes, and then there are cakes that you just can't forget because they're so ridiculously good. If you like the combination of mint and chocolate, this chocolate cake with mint chocolate chip frosting is one of the latter.

From Shugary Sweets, it's as delicious as it is impressive. Just look at the picture, how could it not be? The cake by itself is rich, moist, and amazing, but then you add the creamy, buttery icing with dark chocolate chunks and a hint of mint, and it's all over ... almost. Then you add an amazing chocolate ganache, and there's no turning back. It's great for special occasions like birthdays, or anytime you need a fix of something fantastically delicious.

banana split cupcakesObviously this needed to happen. Someone had to invent Banana Split Cupcakes. Here's what's going on with these babies. You're mixing mashed bananas, maraschino cherries, and chocolate chips into yellow cake batter and baking that. Then you're combining marshmallow creme (you know, fluff) with vanilla frosting. And a cherry on top. Ta-da!

These would be awesome for a birthday party, but you could also make them just for no reason this weekend. Fluffy, banana-cherry yum.

big chocolate chip cookiesOne of my closest friends is getting married this weekend, and she told me that when it came to her dessert menu, she had to have one "specialty" item: Cookies and milk. There's nothing sweeter and more comfort foodie than that, right?

For that reason, I often find myself baking cookies all the time, and there's nothing like knowing you've just baked up a batch of the perfect chocolate chip cookies. After seeing celeb chef Tyler Florence's recipe for big, fat, chewy chocolate chip cookies, I may have just found answer to my cookie prayers. Can't wait to try it out!

bacon cheeseburger puffsHere's an appetizer that will satisfy the heartiest of appetites -- bacon cheeseburger puffs. They have all of the taste of a bacon cheeseburger, but in neat, little, bite-sized balls.

This recipe from Plain Chicken is incredibly easy, and they take no time to whip up. You can also make them ahead of time and freeze them if you like, then just take them out and heat them whenever you need them. They're so satisfying that they can even be served as a lunch or dinner.

Apple-Stuffed French Toast Dripping in Caramel Sauce

Recipe A Day

apple stuffed french toastI have been dreaming all week of the same thing. I wake up on Mother's Day morning ... late ... and my husband and kid have prepared me my favorite breakfast in bed. There is French toast, stuffed with apples. And on the side of the tray is some gadget or glittery bit. But that's not what I'm interested in. Not really.

It's the breakfast that might as well be re-labeled as dessert for a meal that I'm craving.  I love French toast, particular when it's made with a good bread (Challah French toast is my favorite) and dripping with sugary syrup. This recipe switches out the syrup for a decadent caramel sauce, but it gets extra points for being super easy!

No-Bake Nutella Cookies: Nom Nom!

Nutella No Bake CookiesAs temperatures continue to climb, I find myself dreading my oven more and more. I know that as we move into summer I'll find every excuse I can to abandon it all together. Of course, that doesn't mean I still don't need my cookies, and that's where the no-bake version comes in so handy.

I've made plenty of batches of no-bake cookies over the years, but this recipe from Shugary Sweets that incorporates Nutella are my favorite by far. The creamy hazelnut spread just gives them a little something extra that makes them so good you'll need to make extra.

Chocolate Chip Cookie Dough Cupcakes Are Twice the Fun

Recipe A Day

chocolate chip cookie dough cupcakeChocolate chip cookies or cupcakes? Cupcakes or chocolate chip cookies? I say: Have BOTH

How about cupcakes with a hidden cookie dough surprise inside? The real surprise is how easy it is to pull off this trick. Just put a small scoop of frozen cookie dough on top of each cupcake before you bake. A heads up -- yes, this means the cookie dough is still semi-raw, so if you're worried about raw egg you may want to use an egg substitute.

No reason why you couldn't tweak this recipe a little and use a chocolate cake mix, or peanut butter cookie dough. The possibilities are (almost!) endless.

Easy, Cheesy No-Boil Macaroni & Cheese

macaroni and cheeseIf there's a universal food of yum, it's got to be macaroni and cheese. It's comfort food at its finest, and nearly everyone likes it. Of course, there are varying degrees of its deliciousness, but homemade always come in first as far as I'm concerned. Of course, it's not as easy as that stuff out of a box, so often the box wins out.

The following recipe from Plain Chicken, however, gives the box a big run for its convenience money, because it's that easy. Get this -- you don't even have to boil the noodles. You simply toss all the ingredients in a pan, cover with aluminum foil, and bake. The end result will blow you and your family away.
