I do this all the time because I don't have much choice: Make dinner in 15 minutes or less. You too? Gone are the days when I used to lovingly labor for 2 hours on a Turkish fish stew with pomegranates. Now I need to get something in front of my son pretty much the moment I walk into the door.

Here are 5 of my favorite go-to dinner recipes, things I can whip up in a jiffy but that are still definitely homemade.

Mmm. I don't know what exactly it is about this time of year, but I can't bring myself to get on the grilled fish and salad bandwagon just yet. Instead, I want something hot, comforting, and satisfying for dinner -- like this kick ass Tomato Vodka Pasta recipe.

(Tomatoes. Vodka. Pasta. What could be better?)

This dish is yummy enough to serve up any night of the week, but it's so indulgent, you might want to save it for special occasions instead. You know, like Saturday evening date nights "in."

And it's also such an easy meal to throw together. Although, if you're feeling creative, you can opt to use fresh tomatoes in lieu of the canned ones the recipe calls for. Nothing says romance like working your magic in the kitchen.

Have do you take one of the most perfect comfort foods on the planet and make it even better? Add bacon, of course! And let me tell you, if you haven't tried macaroni and cheese with bacon, you haven't lived.

Other grown-up twists to this classic dish include a lucious blend of cheeses (no velveeta here), and a hint of nutmeg to make all the flavors really pop. Take the time to try this dish. You won't regret it -- at least not until your pants don't fit anymore. Worth it.

I discovered Cajun seasoning way too late in my life, but since a good friend from Louisiana opened my eyes to this amazing spice, I'm always on the lookout for great recipes that incorporate unique flavors from the Deep South. As a girl with a Mediterranean background, I got super excited when I discovered this recipe for Creamy Cajun Chicken Pasta. It's simple to make, takes about 25 minutes -- perfect for busy weekdays -- AND blends the best of New Orleans and Italy in one dish. Bring it on!

Good grief. Could it possibly be any colder this week? It doesn't matter what part of the country you live in ... it's beyond frigid. And that's why even though we all swore we were going to hop back on the salad and grilled fish bandwagon to shed our excess holiday pounds -- all we want is a hot, delicious plate of comfort food to enjoy for dinner each night.

And nothing will quite make your entire family greet you with a big "YES please!" than this scrumptious Lasagna Casserole recipe from AllRecipes.

Are you as full and satisfied and happy and filled with turkey and stuffing and veggies and cranberry sauce and everything else as I am? Thanksgiving 2013 has, sadly, come and gone. Can you believe it? Fun family times, cooking, eating, drinking, watching football, saying what we're thankful for ... but now, while the last thing you want to think about is eating, you still have ALL THOSE LEFTOVERS.

What to do with all that leftover turkey? Of course it's delicious with turkey sandwiches, but maybe you want to switch it up a bit and cook something a little heartier (and cheesier) to get you through these freezing temperatures. How about some pasta? Sweet! Just check out this Turkey Tetrazzini recipe from Pioneer Woman. As she said, you'll want to roast an entire turkey just to have enough left over for this recipe. There might be a big of chopping involved, but all you really have to do is put everything into one big pot!

No offense to vegetarians, but for me, one of the tell-tale signs that I'm eating something extraordinarily delicious is if I don't even realize it contains not an ounce of meat. This creamy, cheesy, absolutely amazing baked pumpkin fettuccine alfredo, courtesy of How Sweet It Is, is the perfect meal to try as we -- believe it or not -- wind down from pumpkin season and shift into gingerbread, eggnog, and all-things peppermint season.

There is nothing more satisfying than a lasagna. Hello, my name is Garfield the cat, and I approve this message. Just kidding, it is really me, Becca Stokes, a writer and not a cat, though I too reserve a fierce hatred for Mondays and a passion for this noodle-laden, warm, saucy entree.

Lasagna! I sing your name from the hills! Of course because I am too plain to have lured a man into my lair, I mostly cook for myself. While weeping. This initially involved a lot of trial and error since I come from a family of six. Every meal I made could serve six people. I've since learned how to portion out my cooking, but lasagna's tricky. They don't sell boxes of noodles designed for one person. So what do to with those leftover noodles?

I don't know about you, but I've always considered pasta to be gender-neutral. Pasta doesn't really care if you're male or female, gay or straight. Pasta just wants to give you some carbs and make you feel warm, fed, and slightly bloated for a while. Pasta is not picky. But one pasta company sure is. Italian pasta company Barilla likes to feature "traditional" families in its ads: One dad, one mom, and their kids. Coincidence? Nope. Barilla's chairman, Guido Barilla, recently spoke out about the choice and said it was deliberate. The gays can go eat some other brand of pasta.
