    Happy almost-Cinco de Mayo -- the holiday celebrated more in America than in Mexico. In the state of Puebla, the holiday is called El Día de la Batalla de Puebla and commemorates a battle the Mexican army won against French forces in 1862. (Mexican Independence Day is September 16.) The holiday is still celebrated in Puebla, a region famous for its complicated but amazing mole sauces.

    Here in the U.S., Cinco de Mayo has become a celebration of Mexican heritage. So when it comes to traditional Cinco de Mayo party food, almost anything Mexican-ish goes. Even Tex-Mex and California-style burritos. But here's a few of my favorite picks.

    When I think of Cinco de Mayo, I think of tequila (hey, just being honest). When I think of tequila, I think of margaritas and shot glasses and salt and limes ... but I don't generally think about cookies.

    Or I should say I didn't think about tequila and cookies together, but that was before I tried these bad boys. Sugary, citrus-y tequila cookies are the ultimate treat for Cinco de Mayo (or Quatro de Mayo, or Cinco de Junio, or any day of any month-o, as far as I'm concerned).

    They're even really easy to make.

    Which is muy bueno, because you might end up sampling some ingredients while you bake and a super challenging recipe might not be the best choice.

    We all love oven-backed nacho. But if you're not a fan of scraping cheese crisps off your baking sheet, I have another alternative for you: Slow-cooker nachos! Yup, just add all the ingredients you want to go gooey -- bean, cheese, salsa -- into the slow cooker and let it work its melty magic. Then just pour it over your chips.

    This recipe is for black beans, but you could pinto beans instead if you like those better. For that matter, if you have some already-browned ground meat (sans pink slime, of course) you could add that in, as well. With a salad on the side I would call this Friday Night Dinner. I would also call it delicious.
