I'm not sure why, but before a couple of years ago, I'd never purchased a rotisserie chicken. Ever.

For some reason it just never dawned on me as something that I would want to eat. I'm not a big fan of just eating pieces of chicken off of the bone, but what I failed to realize for too long is that the meat comes off those bones easily and can be used in all sorts of delicious recipes. And by doing so, those recipes get exponentially easier to make as you get to skip one major step -- cooking the chicken.

Since my enlightenment, I've found a host of ways to make quick family meals using rotisserie chickens. Here are six of my favorite recipes. Note: I typically have my deli just give me the breasts from a rotisserie chicken or two, but if you like dark meat, then just grab a whole bird.

Here's a recipe that's so simple and so delicious, once you make it, it will forever be in your dinner rotation. It's chicken taco soup, and it's filling, flavorful, and phenomenal.

Similar to a tortilla soup, this recipe adapted from All Recipes is a bit heartier as it contains beans, tomato sauce, taco seasoning, and more. The chicken cooks right in the soup, so you can just start with raw breasts. Served with cheese, tortilla chips, avocado slices, and any other Tex Mex toppings you like, it's a one-bowl meal that everyone will crave.

Just yesterday I was analyzing the not so subtle differences between date night before kids and date night after, when it dawned on me that I spend most should be "date nights" with my children anyway.

Yep, my Saturday nights are more Carnival than candlelit, more pizza than pizzazz, more cartoons than concerts. Have you ditched ambiance for arcades? If the Then vs. Now below sounds familiar -- the answer is a resounding yes:

As a modern, 21st-century, go-getter mom I have to multi-task a lot. For example, at this very moment I'm composing this post, tending a sick child, doing my kegels, and IMing Kate Middleton baby name ideas (really weird how she's not responding to me). So shouldn't my appliances multi-task, too? That's what I asked my dish-washing machine this morning.

See, it does a fine job of washing the dishes for me. But what I could wash the dishes and cook dinner at the same time using the dishwasher?!? Readers, I made that happen. Check it out.

Kraft Macaroni 'n' Cheese has been a dinner staple for moms for as long as we can remember. Kids absolutely adore it. Heck, parents adore it. It's a classic, iconic comfort food. I've literally had friends say that if their mac doesn't have that orange yellow-y signature color of Kraft's cheese, then it's just not the same. Still, it's that food coloring that's causing quite an uproar among some concerned consumers.

Two North Carolina food bloggers -- Lisa Leake and Vani Hari -- felt similarly warm and fuzzy about the product until they learned that the U.S. version contains the additives Yellow 5 and Yellow 6. In turn, they created an online petition in hopes of garnering support to demand a change. Amazingly, so far, more than 155K people have signed the Change.org petition, requesting that Kraft to made the U.S. version of the mac additive-free, too.

It never occurred to me until I started looking for meat loaf recipes, but you can totally cook meat loaf in your crock pot! Of course -- why didn't I think of that? It makes perfect sense. Here's a recipe for what's called Melt-in-Your-Mouth Meat Loaf. That sounds promising, doesn't it? It's super simple to prepare, too. If it's still winter where you are, this is a great snow day dinner.

There's nothing that warms your body and soul better than a hot bowl of soup on a chilly evening, especially when you don't have to put a ton of effort into making it. And when it comes to cutting down on prep and cooking time, whipping up a delicious batch of soup in the slow cooker is the only way to go.

After stumbling across this Crock-Pot Creamy Tomato Soup recipe from Crockin' Girls, I know what's going to be on my dinner menu one night this weekend. With healthy ingredients that most of us probably already have in our pantries, this soup provides the ultimate dose of good old-fashioned comfort food with little to no effort. (Seriously. My 7-year-old could throw this dish together.)

Ugh, it's March -- such a tricky month. On one hand, it feels hopeful because you know spring is right around the corner. On the other hand, it's still chilly and windy, and so blah! And what's to eat? By now I'm sick of heavy winter food. But on the other hand, I'm not exactly ready for grilling and salads, either.

It's funny, I was just thinking about March food this morning when a friend of mine posted the same exact question -- what do you eat in March?!? Foods that are still warm and cozy, but a little lighter. Foods with a lot of flavor and maybe even a little spice. Don't you think? Here's five recipes to liven up dinner this month.

Although we've been hearing for a while now that "breastaurants" are on the rise, Hooters seems anxious to draw new meat into their nationwide restaurants. So much so that they've resorted to attacking other popular chains as a way to convince potential consumers that Hooters is The One, The Only, The AWESOMEST Place to have dinner tonight! (Uh huh ...) Okay, really, they've zeroed in on just one popular chain: Chipotle

Hooters would have us believe you'd have to be totally lame, dude, to pick Chipotle's boring, bland, and cookie cutter food over their ... sexy waitresses and colorful salads, crab legs, and of course, wings! Ha ha ha. Check out the ad ...

If you're like most families I know, at least one night a week is typically designated as Taco Night. Tacos are easy to make, everyone loves them, and it's always good to have that easy idea in the pocket. But why not shake things up just a little bit with this tasty taco ring?

From Her View From Home, it's a delicious twist on traditional tacos. Instead of using corn or flour shells, you instead use crescent roll dough as the foundation. Inside you put ground beef, cheese, and all of the other goodness of tacos. Toppings like lettuce, tomatoes, and sour cream can be piled up in the middle, and everyone can help themselves. It's great for a family dinner or to feed a crowd at a potluck or other event.
