Happy almost-Cinco de Mayo -- the holiday celebrated more in America than in Mexico. In the state of Puebla, the holiday is called El Día de la Batalla de Puebla and commemorates a battle the Mexican army won against French forces in 1862. (Mexican Independence Day is September 16.) The holiday is still celebrated in Puebla, a region famous for its complicated but amazing mole sauces.

Here in the U.S., Cinco de Mayo has become a celebration of Mexican heritage. So when it comes to traditional Cinco de Mayo party food, almost anything Mexican-ish goes. Even Tex-Mex and California-style burritos. But here's a few of my favorite picks.

Mmm. Even though bathing suit season is right around the corner, it's still next to impossible to give up desserts in favor of looking a bit better on the beach. Especially when the treats you serve up after dinner are light, refreshing, and nothing short of delicious.

Like this decadent Lemon Blueberry Cupcakes recipe from Betty Crocker, for example. Is there any better combination than berry and lemon? They're the perfect pair, and they create such a wonderful flavor explosion for your taste buds. You gotta love a great mix of tart and sweet. (I'm salivating. And I know I'm not the only one.)

While cupcakes are delicious any time of year, this particular recipe seems to be the perfect blend of spring and summer, so it's one you can whip up and enjoy for months to come.

Fancy, overpriced, oversized gourmet bakery cupcakes may be declining in popularity, but let's get real here. Regular homemade cupcakes are never going to go out of style! Granted, sometimes you wanna mix it up. Like try a snazzy new presentation or a couple delish experimental ingredients. No, I'm not talking about something like hickory smoked bacon-infused chocolate (blech!). More like cupcakes inside ice cream cones! How cute! What's more, this ice cream cone cupcake recipe from Martha Stewart makes the adorable dessert seem super easy. Check it out ...

So let's get this straight. A man finds armed robbers trying to break into his home. He bravely scares them off, they flee by foot, and he calls the police. But he's the one who gets arrested? Someone is high!

Someone, or a lot of someones. When police investigated, they allegedly found the homeowner in possession of about 8,000 cookies containing pot. EIGHT THOUSAND! Holy baked Keebler Elves. Was that what the robbers were after?

I'm not quite sure who masterminded this Rice Krispie treat cupcakes recipe, but they need to be considered for a Nobel Peace Prize. I mean, what better way to tranquilize a group of hungry kids than with a combination of their favorite sweet snacks? It's a twofer to end all twofers, and a snap crackle pop to end all snap crackle pops.

Ah, spring is the in the air, the flowers are blooming, and the world looks just a little bit brighter. Why not sweeten things up a little more by bringing some of that loveliness to your dessert as well? These flower pot desserts are as delicious as they are adorable.

Following is a basic recipe from Southern Food that layers cookies and a creamy pudding mixture, but you can really mix it up any way you want, using various cookies, cakes, and ice cream inside the pot. The key is the crushed-up Oreos on top to look like dirt, and the gummy worms for kick. You can use either fake or real flowers, but if you opt to go with real, try inserting them into green straws (they look like stems) to keep them off of the food. Your kids will love to help make them as much as they will love to eat them.

Even though we still have a couple months to go before summer arrives, it's fun to whip up delicious treats that make us even more excited about the season.

And you can be sure that your kids will absolutely flip when you try this adorable watermelon cake pops recipe from Duhlicious.

OMG. They're like little miniature watermelons on a stick -- do desserts get any cuter than that?

    (Nope.)

Are we finally over cupcakes? Food bloggers and hipster naysayers have been calling the end of the cupcake trend for years now, and I've always laughed them off. But now? We have actual evidence of the cupcake's imminent demise. Trendy cupcake baker Crumbs Bake Shop says their sales are down by 22 percent. Yikes!

A cupcake-industry expert told the Wall Street Journal, "Demand is flat. And quite frankly, people can bake cupcakes." OMG, are cupcake shops going to close? Will the frosting-swirled confections disappear from bakery windows? Will we seriously have to (gulp) bake our own?!?
