    Aren't these rainbow sandwich cookies lovely! I know I love the classic sugar cookie with frosting. This is the same thing, but reversed. Instead of tinting the frosting, you're tinting the cookie dough. You frost one cookie and then put another cookie on top. Did I mention it's March 1? Spring is ... not here yet. But it's just around the corner. So these cookies are making me feel excited for the new season.

    Regular food coloring works fine, but if you happen to see gel food coloring, that will give you the more intense colors you see here. I think this looks like a fun baking project to do with your kids. Here's the recipe and directions for making these sweet, pretty cookies.     Purim is my favorite of the Jewish holidays for many reason. The first is because it is the Jewish Halloween, which -- let's face it -- is pretty cool. But the second, not so distant one, is Hamentashen. Oh yes. Delish. These little cookies are made to look like Hamen's hat, but taste like a million little bursts of goodness on your tongue.

    Every year, without fail, I also search for a great recipe for these delicious, buttery cookies filled with fruit, poppy seeds, or (my favorite) Nutella. The story of Purim is the tale of how the Jewish people were saved from Haman's evil plot to have them all killed. I have never totally understood why that means we all eat his hat, but whatever. It tastes good, so I do not question.
