    Has spring finally sprung? Or is it too soon to hope? After such a long, cold, seemingly never-ending winter, now's the time to put away those comfort food recipes and perhaps try something a little lighter, a little sweeter, just in time for spring. These divine lemon cream sandwich cookies from Epicurious are both gorgeous and super easy to make. The bright colors and fresh citrus will make you forget about your winter blues in no time.

    Keep in mind, though, to get the cookies super fluffy, you do have to chill the dough for four hours, up to one day. At least for the best results. Still, you can make them two days ahead so you can enjoy these little, sweet, tart sandwiches of heaven whenever you so please.

    Well, it's officially spring, folks! And with the weather finally getting slightly sunnier and warmer, we can't help but think of ice cream ... like, mmm, rocky road! Who can resist the combo of marshmallows, chocolate, and nuts? Even so, you might also feel like it's still a bit too chilly out to get your ice cream fix on. Fair enough.

    You can have your corned beef and cabbage for St. Patrick's Day. For me the holiday means one thing: What foods can I dye green? I'm not talking already-green foods like broccoli and kale -- those are our everyday foods! (Wink!) I mean, whipping out ye lucky old green food coloring to give everything a bit o' the emerald.

    Toffee is one of my favorite guilty pleasures. When I spot a Heath Bar or a Skor Bar while I'm in line at the grocery store, or at the drug store, or in my dreams, I have a hard time NOT buying it and immediately consuming it as fast as humanly possible. Thankfully for me and my expanding-waistline (#foodbaby), toffee is also one of those things that's pretty difficult to make at home.

    It's not impossible, and if you're willing to invest in a candy thermometer, and you have a lot of patience, you can whip up a batch of the sweet crunchy stuff whenever you want in the comfort of your own home.     Snickerdoodles are heaven-sent. Cookies of any sort are delicious, to be sure. Only a philistine would disagree with this sentiment. But snickerdoodles, with their chewy, buttery sweetness and cinnamon-scented warmth, are something special.     I've been wondering when the Girl Scouts of America were going to debut their first gluten-free cookie. Well, the time has come! From the same little sweet tooth-quelling angels who sell us Thin Mints and Samoas year after year, we'll soon be able to purchase chocolate chip shortbread cookies made sans gluten! Hooray!

    The only problem: Only 20 Girl Scout councils have chosen to offer the treat so far.     Sometimes messing with a good thing is a terrible idea. But Oreo doesn't believe in adhering to these old cliches! It's kicking down the walls of its traditional flavors and getting its freak on!     It's not like they've tried anything too jaw-dropping. I mean, things that are irrefutably awsome: cookie dough and Rice Krispies treat-type things. The idea of cookie dough inside of a finished cookie kind of skeeves me a little, but utlimately the flavor is very much like a cookies and cream ice cream.
