Make Ahead Healthy Lunch: Spinach Wraps

spinach wrapRemember our Turkey Pinwheel appetizer that is such a hit at parties? That's the inspiration behind this recipe for Spinach Wraps, which are so easy to make ahead of time and bring the next day for lunch.

Spinach Wraps

6 tortillas, preferably whole-wheat

1 package light cream cheese

2 teaspoons horseradish OR dried herbs like basil, parsley, etc. (This is optional.)

2 tablespoons green onion, sliced thin

4 Roma tomatoes, diced tiny

6 oz baby spinach leaves, chopped

Mix cream cheese with horseradish (if you like spicy!) or herbs (if you don't). If your kids prefer, leave it plain. Spread 1/6 of cream cheese mixture on one side of tortilla. Top with green onion, tomatoes, and spinach. Roll tortilla tightly and wrap individually in plastic wrap. Refrigerate. Repeat with remaining tortillas and ingredients.

For kids, the wraps can either be sliced thin—like the Pinwheels!—or left whole.
