It's Week 4 of my "less meat" resolution, and we've been eating a TON of vegetables and feeling really great. Lately, one of our favorite no-meat meals is this Green, Green Salad with homemade Green Goddess dressing (herbs, lemon juice, and yogurt) inspired by a salad I had at one of my favorite vegetarian restaurants here in Chicago. It's really filling, healthy, and as you can tell from the name, everything in the salad is GREEN!
Green Green Salad
Raw baby spinach leaves
Pea pods
Edamame, shelled
Cucumber, peeled and sliced
Avocado, sliced
Green onions, sliced
Any other green veggies/food of your choosing
Salt and pepper
Homemade Green Goddess Dressing
1/2 teaspoon dried parsley
1/2 teaspoon dried basil
1/2 teaspoon dried tarragon or dill
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 tablespoon vinegar
1 tablespoon lemon juice
2/3 cup plain yogurt
Combine spices, vinegar, and lemon juice. Whisk in yogurt. Toss salad in dressing.
