Breakfast Idea: Oh My Darling, Clementines!

bowl of clementinesClementines have been on super sale at my grocery store! I love these orange citrus fruits because they're so sweet and tiny! They're perfect on their own, or you can use them to top salads, cereal, or other recipes. I also like to make a simple fresh Clementine sauce with them to drizzle over plain yogurt with granola in the morning. Or, if I'm making a special breakfast, I'll use it to top pancakes, crepes, or Dutch pancakes.

The possibilities are endless!


Clementine Sauce

1/2 cup water

1/4 cup sugar (or less if your clementines are really sweet)

1 teaspoon cornstarch

6 clementines peeled, sections separated

1 tablespoon lemon juice

Combine water, sugar, and cornstarch in saucepan, stirring with a whisk. Bring to a boil; cook for 1 minute or until thick. Remove from heat, and stir in clementine sections and lemon juice. Drizzle over pancakes, crepes, plain yogurt, etc.
