Healthy Breakfast: Scrambled Egg Whites

Kim Conte

eggsDid you know that you can make scrambled eggs in the microwave? I've been making 'em this way for years and never thought twice about it until a friend of mine watched me do it and was truly fascinated...she had no idea scrambled eggs were so easy—and fast!—to make.

I know that lots of us are trying to recover from the holidays and looking for healthy breakfast ideas in the new year. Scrambled egg whites are a great way to get healthy protein without a lot of fat. Plus, they take about 3 minutes to for everyone with their "I don't have time for breakfast" nonsense? I don't want to hear it!

When I'm being really good, I eat them with a slice of dry whole wheat toast and a piece of fruit. But every once in a while, I'll scramble them with a little low-fat shredded cheese and make an egg sandwich using ketchup and an English muffin. Yum!

Scrambled egg whites

2 egg whites

1 tablespoon of milk or water

Salt and pepper to taste

In a shallow dish, beat egg whites and milk/water lightly with a fork until just combined. Microwave for 1 minute on half power. Remove dish from microwave and stir eggs with a fork. Microwave for 1 minute on half power. Remove and stir again. Microwave for 30 second intervals on half power until eggs reach a desired consistency.
