I've been asking CafeMoms for their families' favorite holiday recipes. Today, Cozycabinmom shares her recipe for Hot Spinach Artichoke Dip.
Mmmmmm...sounds so good...Cozycabinmom, how would you feel about an extra guest this holiday season?
Hot Spinach Artichoke Dip from Cozycabinmom
1 (10-ounce) package frozen chopped spinach
2 (13 3/4-ounce) cans artichoke hearts
1/2 cup mayonnaise
1/2 cup sour cream
1 cup freshly grated Parmesan
1 cup grated pepper jack cheese
Preheat the oven to 350. Grease a casserole dish with nonstick spray. Heat the spinach in a microwave oven on high for 5 minutes and squeeze dry. Drain the artichoke hearts and coarsely chop in a food processor. Combine all the ingredients except the jack cheese in a large bowl. Stir well. Scrape into the prepared casserole dish and sprinkle the jack cheese on top. Bake for 30 minutes. Transfer to a chafing dish and keep warm over a low flame. Serve with bagel chips.

I do feel inferior for not having a chafing dish, however.
I just got a set of 4 chafing dishes (with 19 around our table, I will use them all!) and a friend used to make this dip...this saves me begging her for the recipe LOL It is soooo good!
I have one chafing dish...just one though. :)
Thank you for the recipe. I was not chopping up my artichoke hearts and I make a parmesean cream sauce out of rue, milk and parm cheese. Its just was not right though. I do like to garnish the top with diced tomatoes and sprinkle more parmesean cheese. My teen will be thrilled when I get it right.
