Happy One-Pot Wednesday!
We eat a lot of sweet potatoes in my house because they're high in Vitamin A, Vitamin C, and fiber. Plus, yams taste great because they're naturally sweet! We'll be trying this easy recipe for one-pot Garlic Pot Roast and Sweet Potatoes from Betty Crocker. Just combine ingredients in the crock pot and leave it to cook all day.
Slow Cooker Garlic Pork Roast and Sweet Potatoes
3.5 lb boneless pork loin roast
1 teaspoon salt
1/2 teaspoon pepper
4 cups sweet potatoes, peeled and cut into 1-inch cubes
1 medium onion, sliced
6 cloves garlic, peeled
1cup chicken broth or 1 cup apple cider
Place sweet potatoes, onion, and garlic in crock pot. Season pork with salt and pepper, and place on vegetables. Pour broth/cider over pork. Cover. Cook on low heat setting 8 to 10 hours.
