Sometimes it's nice to start the day off with a hot breakfast. For me, simple ham and cheese egg casserole often hits the spot. The best part about this recipe is that you can make it on the weekend, and warm up leftovers in the microwave all week long!
1 cup cottage cheese
1 cup ham (diced)
1 cup cheddar cheese (grated)
2 green onions (chopped)
salt and pepper to taste
Mix everything in a bowl. Pour into an 8 inch square baking pan. Bake in a preheated 375F oven until the eggs are firmly set and golden brown on top, about 25-35 minutes.
