Kids love classic grilled cheese for lunch, but just by adding a few creative ingredients, it can also be a quick and easy dinner. Here are my four favorite ways to jazz up a grilled cheese sandwich:
1. Cheese, apples, and honey: Layer cheddar cheese, sliced Granny Smith apples, and a drizzle of honey in between two slices of buttered bread. Grill in skillet or under broiler until golden brown.
2. Pizza-style: Make an Italian-inspired grilled cheese with tomato sauce, melted mozzarella cheese, and your kids' favorite pizza toppings (shredded pepperoni slices, sliced black olives, etc.).
3. BLT (without the "L"): Add crispy bacon and tomato slices to a classic grilled American cheese sandwich. Yum!
4. Monte Cristo: Assemble sandwiches with cheese, sliced deli meat (ham or turkey), and mustard or mayo. Beat 2 eggs with 1/2 cup milk. Dip sandwiches in egg mixture and fry in hot skillet until golden.
Want a healthier version of grilled cheese? Toast two slices of bread in the toaster. Cover one toasted slice with cheese and other toppings; top with remaining slice; wrap sandwich in paper towel and microwave for 20-30 second on half-power until cheese is melted. It's not nearly as satisfying as the buttered version made in the skillet or broiler; but it has way less fat.

I have two ways, simple and french : )
I like regular grilled cheese with a bit of ham, dipped in tomato soup.
The other one is a croque-monsieur, ham and Gruyere with bechamel sauce.
Oh yum! Croque-monsieur sounds delish!
We use galaxy vegan slices, they make the yummiest grilled "cheese" minus the dairy. Plus they actually melt, which is rare for vegan cheese.
i use a panini press. just bread and cheese. not as tasty, but much healthier than using butter. and easier too.
We have traditional grilled cheese at least once a month for dinner... It's usually grilled swiss or white american or jack cheese, and then we have them with soup to 'dip' in.

Our soup choices are either homemade tomatoe basil, or bean with bacon!
I also love the grilled cheese we get at our fav bistro! ----They feature ham, Gruyere and bechamel sauce! --- Yummy!
I don't do anything special with mine but my husband has all kinds of weird rules that we do when making it. Examples, the bread must be frozen, you must use margarine, you must use two pieces of cheese that are cut in a certain way. And that is just a few of them.
A couple of these sound pretty good and I would like to try them.
