Moms were trading some ingenious recipe ideas for corn bread mix you may not have thought of before. Here's one of the suggestions I liked, Corn Bread Chicken Tenders, straight after the jump. Thanks to Mminmin for posting it.

Corn Bread Chicken Tenders
1/4 cup corn bread/muffin mix
3 tbsp prepared Ranch salad dressing
6 chicken tenderloins
2 tsp canola oil
How to make it:
1. Place corn bread mix and salad dressing in separate shallow bowls.
2. Dip chicken in dressing, then roll in corn muffin mix.
3. In large skillet, cook chicken in oil over medium heat for 3-4 minutes on each side or until juices run clear.
Tip: Mminmin used breasts split in half, and seasoned them with onion and garlic powder, as well.
Tip: The breading tends to fall off in sauteeing; you can also bake these.
