A friend made these Turkey Pinwheels for a Labor Day barbecue this weekend. The little tortilla roll-ups are always a hit at parties, but they can also double as a easy lunch or snack. I have a basic recipe here, but you can substitute whatever deli meat or veggies you have in the fridge...
Party Pinwheels (makes about 20-25 pinwheels)
1/6 cup mayo
1 8 oz. package cream cheese
3 large tortillas
1/2 lb sliced turkey
1/2 cup chopped green onions
1 red bell pepper, diced
Mix mayo and cream cheese. Spread on tortillas. Sprinkle onions and pepper. Layer turkey. Roll up tortillas. Cover tightly with plastic wrap, twisting ends; refrigerate for several hours. Unwrap; cut in slices 3/4- to 1-inch thick. Discard ends. Enjoy!
