I love to feature Favorite Family Recipes from CafeMom members. Today Kimmykim, author of the delicious recipe blog But Mama I'm Hungry, shares her family's favorite recipe for Extreme Chicken.
Why does Kimmykim's family like this recipe so much?
Sometimes with kids it's hard to get them to eat dinner. My 2-year-old seems to eat only breakfast, and then the rest of the day he just snacks on things. But, when I make this dinner everyone eats it up! This recipe is simple, yet really yummy and is so versatile, you could make it to fit your family's likings: If you don't like tater tots, use French fries or baked potatoes. If you don't like spice, leave out the jalapenos. If you do like spice, use spicy hot chili! Whatever you do, your family is sure to love this dinner! I know my kids think it's a blast to eat chili cheese tater tots with some chicken thrown in for dinner! Serve it along with a veggie and you're good to go!
Extreme Chicken From KimmyKim
2 lb. bag frozen tater tots
6 small boneless skinless chicken breasts
Season salt to taste
2 (15 ounce) cans chili with beans
2 cups cheddar cheese, shredded and divided
Prepared ranch dressing, for topping
Chopped tomatoes, for topping
Diced onions, for topping
Jarred jalapeno rings, for topping
Cook tater tots as directed on bag, baking them. While those are cooking, heat a large skillet over high heat. Spray with cooking spray and place chicken breasts that have been seasoned with season salt into skillet. Brown on each side, about 4 minutes per side or until the chicken is almost all of the way cooked through. Once the chicken is browned, open and pour the two cans of chili over the chicken breasts. Cover with a lid or with foil and cook on medium heat until chili is heated through and chicken is done cooking. Remove lid and cover everything with 1 cup of shredded cheese, place lid or foil back on until cheese is melted.
To serve, place a serving size of tater tots on plate, cover with one chicken breast and some of the chili. Add extra cheese, if desired and drizzle ranch dressing on top, followed by any of the other toppings that you like. We use diced onions, chopped tomatoes and jalapeno rings. Enjoy! Serves 6.

Thanks for featuring my recipe!
Omg this was a super yummy recipe just reading it, but then when I actually made it for me and my 5 yr old food disposal son HE LOVED IT..... he told me that it was soo good rubbed his tummy and said mom your the best mom in the world. Haha... I enjoyed very much myself definately the jalapenos make it adult worthy too! thanks for sharing!!
