Favorite Family Recipes: Chuckletushy

Why does Chuckletushy's family love this recipe so much? Because she says, "It is comfort food at it's best...LOL."

I couldn't agree more.

Here's how to make it:

Mama Carolyn's Mac n' Cheese Recipe

4 cups uncooked elbow macaroni

1/4 cup margarine

1/4 cup flour

1/2 tsp salt

1/4 tsp pepper

1/4 tsp dry mustard

1/4 tsp Worchestershire sauce

2 cups milk (use 1 can evaporated and add enough regular milk to make the 2 cups)

4 oz shredded white cheddar

8 oz shredded yellow cheddar

8 oz shredded swiss

6 oz cream cheese

2 celery stalks, minced

2 medium onions, minced

1 garlic clove, minced

1-1/2 cups crushed Dorito type chips (or Italian bread crumbs)

3 Tbsp melted margarine

Preheat oven to 350F. Cook macaroni al dente. Saute garlic, onions, and celery in the margarine. Stir in flour, salt, pepper, mustard, and Worchestershire sauce. Cook over low heat until smooth and bubbly, remove from heat. Whisk in milk. Return to medium heat, stirring constantly until boiling. Boil and stir for 1 minute. Add shredded cheeses stirring until melted then add cream cheese. Blend until melted.

Combine the 3 tablespoons melted margarine and the crumbs. Set aside.

Add the macaroni to the cheese mixture. Pour into a lightly greased casserole-type pan. Sprinkle with the crumbs. Bake 20 to 30 minutes or until golden and bubbly.
