Wouldn't these cute Cherry Tomato Lollipops be a fun starter for a barbecue?
24 cherry tomatoes
1 small ripe avocado
1 tablespoon fresh lime juice
1 teaspoon coarse salt
2 oz jalapeno or tomato-and-olive Jack cheese, diced into 24 pieces
Cut 1/4- to 1/2-inch off the top of each cherry tomato. Scoop out seeds, leaving the shell of the tomato intact.
In bowl, mash avocado with lime juice and salt until blended. Spoon about 1/2 teaspoon avocado mixture into each tomato. Top with a piece of cheese. Skewer each tomato.
