Every week I feature a favorite family recipe from a CafeMom. This week Girl_In_The_D shares her go-to recipe for Bacon-Potato Salad—a must-have at her family's summer get-togethers.

Why does Girl_In_the_D's family like this recipe so much?

It's a side dish but we LOVE to picnic, and this travels well because there is no mayo. I also pull it out for every barbecue and cookout we have. :)

Bacon-Potato Salad

3 lbs Yukon gold potatoes (they are buttery and creamy and go nicely with the bacon)

6 slices of bacon, cooked and crumbled

1/2 cup diced red onion (truthfully I leave this out because I hate onions BUT I know the rest of the world is in love with onions, LOL )

1/2 cup minced celery

1/3 cup vegetable oil

2 tablespoons cider vinegar

1tablespoon Dijon mustard

1/2 tsp salt and pepper

Put the potatoes in a large pot of salted water and bring to a boil. Cook about 25-35 minutes until the potatoes are tender and you can pierce the potatoes easily with a fork. Drain and peel when cool to the touch. Dice the potatoes.

In a big bowl mix the potatoes, onions, bacon, and celery. In a jar/container combine the oil, vinegar, mustard, salt and pepper.

Shake well and once blended all together pour over potatoes and mix. Enjoy!
