Loved Stephanie's recent post on 3191 Miles Apart about her family's regular Salad Night. I'm always looking for ways to spruce up our family meal ideas, and this seems fun.
"It's really an excuse for me to empty out my refrigerator onto the dining table, and see what happens," says Stephanie. "On this particular night we had fresh local lettuce, shredded carrots, avocado, caramelized shallots and corn, bacon crumbles, hard boiled eggs, cucumbers quick-pickled in rice vinegar, goat cheese, toasted almonds, and some leftover roasted potatoes."
I love this fun family meal idea. Even if the kids avoid lettuce altogether, they're still getting lots of other healthy goodies and getting to make choices about food, which is key.
Plus, it's the "do it yourself" part that I think my boys would get into. I really think my 6yo would get into building a carrot and avocado castle and then dropping little bacon and corn "bombs" on top of it, that sort of thing.
Now I just wonder if he'll eat it.

we would love it..we have salad for dinner all the time in fact if my daughter doesnt like what we are having for dinner she will ask if she can just have a salad...we set up the "toppings" on the counter and you build it as you go
Our family would really like this...all three of our kids love salad and veggies, and love "DIY" food like tacos and what have you...great idea!
Great idea for summer, too! Who wants to cook when it's hot? Plus, this is hydrating and good for all!
We have variations of salad night all the time - I do not love lettuce - so I have always been creative in the salad area. In the summertime, we have salad night 3-4 times a week.
I have a picky husband and 2 year old so I don't think they'd fall for it. I would love it though. I might try when my daughter is a little older and more imaginative.
Oh yes! In my house my boys wouldn't eat it cuz they just don't like salad but me, my husband, my daughter, and my neighbor have done it quite a few nights this summer. I love salad and when its hot its the perfect meal.
My boys are such carnivores that unless there was some grilled chicken I don't think they'd be interested without it. However, it is a good way to get them to eat more veg. AND the fact that they make their own salade makes them more likely to eat more or all of it too!
My family loves salad and we do them often. But then again, we also do cereal night. ;)
