Crock pot cooking usually seems like a winter activity, right? But there's actually plenty of delicious summer meals you can make in there as well—including this one-pot Barbecue Chicken and Corn on the Cob, (courtesy of TwinSoccerMom, who got the recipe from Crock Pot Moms).
Barbecue Chicken and Corn on the Cob
3-4 chicken breasts
Barbecue sauce (your favorite brand)
3-4 ears of corn, shucked
Put chicken breasts in the crock pot and cover well with barbecue sauce. Cook on low all day. Wrap each ear of corn in tin foil and put on top of the meat for the last 3-4 hours. (Don't put it in for longer than 3-4 hours or it will get brown and mushy.) When done, shred the chicken and serve on buns.
