Sweet Potato Fries: Baked, Not Fried

What goes perfectly with a juicy burger hot off the grill? Perfect sweet potato fries, fresh from the oven! This version is actually good for you because they're baked in the oven (not fried in a fryer).

One thing to note about these baked sweet potato fries is that they aren't crispy all the way through like regular fries. Rather, they're crunchy on the outside and sweet and soft on the inside. But you won't feel guilty eating a handful of these babies.

Baked Sweet Potato Fries

2 sweet potatoes, peeled and sliced into a "french fry"-shape (about 1/4-inch thick strips)

2 tablespoons olive oil

Seasonings (you can use plain old salt and pepper or experiment a bit with dried Italian herbs; sweet and savory spices like paprika and cinnamon; or spicy spices like cumin and red pepper).

Toss sliced potatoes in oil and spices. Spray baking sheet with cooking spray. Place potatoes in single layer on baking sheet making sure that they aren't touching each other (otherwise, your fries will be soggy). Bake at 350 until golden brown (about 30-40 minutes), flipping the fries once or twice during the baking process. Serves four.
