Taking the kids camping this summer?
Here's a simple one-pot recipe for Cheesy Bacon Onion Mashers that you can make on the trail. It's not only easy to prepare—it's also easy to pack, requiring just a few ingredients.
3 cups instant mashed potatoes
8 tablespoons dry milk
4 tablespoons dried diced onion
1 teaspoon ground pepper
12 tablespoons shelf-stable bacon
4 oz Laughing Cow French Onion-flavored cheese (doesn't have to be refrigerated until after it's opened)
5 cups water
At home: Pack dry ingredients in quart freezer or sandwich bag. Pack bacon and cheese separately.
On the trail: Bring water to boil in your pot. Remove from heat and add bacon, unwrapped cheese, and dry ingredients. Stir well.
