I bought a HUGE bunch of fresh spinach at the farmers' market this weekend, so we've been eating spinach, spinach, and more spinach. Here's one of the recipes I made with it: Wilted Spinach Salad with Warm Feta Dressing. It's perfect as a side at a summer barbecue or topped with grilled chicken for lunch.
9 oz fresh spinach, washed
5 tablespoons olive oil
1 red onion, halved and cut into thin wedges
1 7 oz package feta cheese, crumbled
2 tablespoons sherry wine vinegar
Place spinach in large bowl. Heat 2 tablespoons olive oil in skillet over high heat. Add onion, and saute until brown (about 7 minutes). Transfer onion to bowl with spinach. While skillet is still hot, add remaining 3 tablespoons of oil and cheese to skillet. Stir to melt cheese slightly (about 1 minute). Stir in vinegar. Pour over spinach and toss to coat and wilt slightly. Season with salt and pepper.
