To me, Memorial Day conjures up heavenly images and aromas of meat sizzling on the barbecue, potato salad, baked beans, and ice cream. But many of us would rather spend the day with our families than standing at the grill. For this reason, I'm posting this recipe for BBQ Ribs. You make in the crock pot, letting 'em slow cook all day long while you attend to business that's a little more, well, fun!
BBQ Ribs adapted from Mable Hoffman's Crockery Cookery
4-5 lbs of ribs, cut in pieces (this recipe calls for short ribs, but any ribs will do)
1/2 cup ketchup
2 tablespoons brown sugar
1/2 cup steak sauce
2 tablespoons vinegar
1/4 tsp salt
1/4 teaspoon of hickory smoked salt or any smoked steak seasoning
1/2 onion, diced OR 1/2 teaspoon of instant minced onion
Brown ribs in oven at 400 for 10-15 minutes each side, and then drain fat. (this is an optional step but helps to drain off some of the fat). Place ribs in crock pot. Combine remaining ingredients and pour over ribs. Cook on low for 6-8 hours.

My dear, sweet, kind and loving (nooooo I am not being sarcastic..nudge, nudge, wink, wink) hubby just decided to tell me last night that he is opening the pool up this weekend AND has invited "a couple" friends over AND told them I would make dinner because the love my food. Those were his words, I am not being full of myself there. So, I think this looks perfect to make and I won't have to spend all day in the kitchen cooking!
