Kale & Beans: Healthy & Delicious Side Dish

kale recipeI am one of Gina Neely's biggest fans. She has such a warm personality and is one heck of a cook. I've gotten a lot of ideas from her show, Down Home with the Neelys, and one of my favorites is kale and white beans.


I think I modified the recipe slightly, but the dish was inspired by her and I'm always watching the show for more things to add to my meals.

Kale is a great alternative to spinach, plus it's nutritious and full of anti-oxidants.

You will need:

  • A fresh bunch of kale (washed thoroughly)
  • 1 small can of small white beans (about 1 cup)
  • garlic, chopped (about 1 tablespoon)
  • olive oil
  • salt and pepper to taste

How to prepare:

After washing and drying kale, remove the thick center part and break into three- to four-inch pieces (for easy serving). Coat a medium to large pan with oliveoil, add chopped garlic and kale. Put beans into pot and simmer for 5 minutes (or beans are soft to your liking). Stir kale until reduced to a softer leaf. Add in beans, salt and pepper to taste, and toss together.

Delicious side dish great with chicken, beef, fish -- you can even add it to pasta!
