Back to business: Today we're making easy Pasta With Basil Pesto for One-Pot Wednesday!
Pasta With Basil Pesto adapted from Cooking for Two 2009 by America's Test Kitchen
(serves 4)
6 garlic cloves, peeled
4 cups fresh basil
1/2 cup grated Parmesan cheese
Handful of walnuts (optional)
2 tablespoons extra virgin olive oil
Salt and pepper
1 pound pasta
For pesto, process garlic, basil, cheese, and walnuts in food processor. With processor running, gradually add oil until smooth.
Boil pasta. Reserve 1/2 cup of the cooking water. Drain pasta, and return it to pot. Add pesto and toss to combine, adding cooking water if too dry. Season with salt and pepper.
