Leftover Ham Recipes

We've discussed plenty of ways to use up leftover Easter eggs, but what about leftover ham? You can only feed your family so many ham sandwiches..








This was a topic covered earlier today in the Food & Drink questions section. CafeMoms had several suggestions for leftover ham:

  • Cristyg suggested making omelets, casseroles, and fritattas with leftover ham.
  • Diamondmamma recommended freezing it in medium-sized chunks and adding it to veggies like collard greens, string beans, and sweet peas for seasoning.
  • Xynyth likes to chop it into chunks and add to macaroni and cheese with peas.
  • Bmat not only suggested making ham and bean soup or adding it to chili, but also said that ham can be substituted for chicken in most casserole recipes. 

I like this recipe for Green Eggs and Ham Casserole from Slashfood.com:

2-3 tablespoons olive oil

1 medium yellow onion, chopped

1 1/2 cup baby portobello (or other) mushrooms, chopped

8 eggs, beaten

1 pound fully cooked, cubed ham

2 (10 ounce) packages of frozen, chopped spinach, thawed and drained

1 cup milk

1 1/2 cups shredded cheddar cheese

1 package pre-made, refrigerated biscuits (split in half, width-wise)

1/4 teaspoon cayenne pepper (don't worry, it won't make the dish spicy, it will just enhance the flavor of the cheddar cheese)

Salt and pepper to taste

In a medium pan over medium heat, sauté the mushrooms and onions in the olive oil until the onions become translucent. Remove from flame and set aside. In a large bowl, mix eggs, ham, milk, spinach, one cup of cheddar cheese, mushroom and onion mixture, salt, pepper and cayenne pepper. Transfer to a greased or buttered 3-quart baking dish and bake uncovered at 350 for 45-50 minutes or until set. Remove from oven, cover with a layer of cheddar cheese (reserving some for the end) and top with biscuits, overlapping them if necessary to fit the size and shape of your dish. Sprinkle remaining cheese on top and bake uncovered for an additional 10-20 minutes, or until cheese is melted and biscuits are golden brown.
