Cooking With...SuperPickle

SuperPickle's 2-year-old son

Homemade Hot Pockets? S'Mores Cheesecake? Peanut Butter Ice Cream Cake? Yum! SAHM SuperPickle tells us how she makes these and more for her three little boys...

CM: Tell me about your family.

My name is Kelli, and I am a 28-year-old SAHM. I have been married to my wonderful husband, Troy, for 8 years, and we have 3 little boys:

Marshall (photo above) is 2-years-old.

Logan will be 5 next month...

...and Trenton is turning 7.

What is your boys' favorite thing to eat for breakfast?

Trenton LOVES my  Egg "McMuffins." I make homemade whole wheat English muffins, and I put on a fried egg, a slice of cheese, and either bacon or a sausage patty. I usually make at least a dozen at a time and pop them in the freezer so we can just throw them in the microwave on school mornings. Logan loves waffles. I make large batches of waffles and freeze them also. They can be put in the toaster just like Eggos, but Logan prefers them to be microwaved. He does not like crispy things. Marshall will eat anything I put in front of him!!!

What is their favorite thing to eat for lunch?

Trenton loves my homemade Hot Pockets(again freezer-friendly and made in large batches). His favorite are pepperoni and cheese. Logan loves bean burritos and ham and cheese is his fave for the hot pockets. Marshall also likes the pepperoni hot pockets.

And dinner?

Dinners are a big thing here. I love to make a wide variety of dishes in any given week, but our all time favorite is Penne Pasta with Smoked Sausage: It's penne pasta with cream of celery soup, milk, mozzarella cheese, cheddar cheese flavor french fried onions, peas, and smoked sausage (we prefer Hillshire Farms turkey kielbasa).

What is one thing you can make better than everyone else?

My entire extended family LOVES my Chocolate Angel Food Cake! It tastes like the inside of a 3 Musketeers. They also rave about my cheesecakes.

If you could eat one food every day for the rest of your life, what would it be?

I don't think I could ever choose!!! I love to experiment WAY too much.

What was the theme of the last birthday party you had for one of your sons?

Trenton turns 7 in 10 days and we are planning a BBQ with some extended family and a sleepover with a friend. He chose an ice cream cake. The bottom layer will be peanut butter ice cream with crushed peanut M&M's and hot fudge in the middle and chocolate ice cream for the top layer. He also has a Tae Kwon Do test for his yellow belt on his birthday that he is very excited about.

Logan turns 5 next month, and we are taking him on his first trip to the zoo (that he remembers anyway) and then having a pizza party. He has not picked out his cake flavor yet.

How did you learn how to cook?

Well, I guess I just sort of taught myself. My grandma is an excellent cook and I remember cooking and baking with my mom but no one really ever "taught" me to cook. I have always had a passion for cooking though. When I was a child I loved to experiment with cookies, changing up the recipes. I would always make dinner and desserts for my friends when I was a teenager. When I became a SAHM I really decided that my family would have the best meals I could provide. I strive to make as much as I can from scratch. I took a cooking course once, but I really preferred my own style.

Do you have a favorite cookbook?

My favorite for gourmet cooking is A Treasury of Great Recipes by Vincent and Mary Price (a side of Vincent Price that most people do not know is that he was really a wonderful chef!). If I am making a meal that I really want to impress people that is the book I automatically turn to. I also love my old copy of Joy of Cooking and my Betty Crocker Picture Cookbook. I have a small collection of vintage cook books. I think old recipes are the BEST! For everyday cooking I use All Recipes A LOT, and Cooks Recipes is my second choice.

If you could meet one celebrity chef who would it be?

Andrew Zimmern!!! He is an awesome chef and is willing to try ANYTHING!!!! Following him, Rachel Ray and Emeril Lagasse are closely tied.
