I got the idea for a waffle sandwich this winter when Dunkin Donuts was offering a Toasted Waffle Sandwich (with scrambled eggs, American cheese, smoked bacon, and maple-infused waffles) for a very limited time. My version is a bit healthier, however.
To make: Toast two frozen whole wheat waffles (such as Kellogg's Eggo Nutri-Grain Low Fat Whole Wheat Waffles). For filling, use 1-2 slices Canadian bacon or turkey slices, and 1-2 slices of low fat or skim milk cheese. This sandwich is filling, full of whole grains and protein, and can even be eaten on the way to school.
