Peanut Butter and Banana Muffins

These Peanut Butter and Banana Muffins are a great, healthy breakfast. They're made with only 1/4 cup of sugar—and no butter or oil.


Peanut Butter and Banana Muffins adapted from

1 3/4 cups all purpose flour

1/4 cup ground flax seed

1 teaspoon baking soda

1/2 teaspoon salt

4 medium mashed ripe banana

1/2 cup honey

1/2 cup chunky peanut butter

2 large eggs

1/3 cup plain yogurt

1/4 cup (packed) dark brown sugar

1 teaspoon vanilla extract

Stir first 4 ingredients in small bowl to blend. Using electric mixer, beat bananas, honey, peanut butter, eggs, yogurt, sugar and vanilla in medium bowl to blend. Beat in flour mixture. Divide batter among muffin cups. Bake at 400 for 15-18 minutes, or until toothpick inserted in center comes out clean.
