Every year around St. Patrick's Day, I'm absolutely amazed by the creative use of green food coloring. There's green shakes, green beer, even green bagels!
A friend of mine had a St. Pat's party this weekend, and her menu included—among more traditional green foods like guacamole and jello—green quiche, green eggs, green muffins, and green pancakes!

Cupcakes with green icing and sugar cookies with green sugar. Yummy! But I've also seen green mashed potatoes (Looked like mint ice cream, tasted like potatoes, kinda weird.) And pretty much everthing else you mentioned.
I am going to fix green srambled eggs and toast for the kids for breakfast.. would also serve ham if we had any.

We made cookie sandwiches with green icing and tonight we are having green chili burritos with guac. I hate cabbage (unless its cole slaw) and I've never been a fan of corned beef either.
