
One-pot Italian sausage, peppers, and onions
A huge thank you to Mommamiaria for this fantastic recipe for Sausage, Peppers, and Onions. I adapted it ever so slightly (with a little help from Giada!) to make it truly appropriate for One-Pot Wednesday.
There's not much I can say about this recipe except that it's cheap to make, takes under an hour to cook, and is absolutely delicious!
Sausage, Pepper, and Onions (adapted from two recipes: one from Mommamiaria and one from Giada De Laurentiis)
1 pound sweet or hot Italian sausage (I used Italian chicken sausage)
Oil
2 bell peppers (I used one red, one green), sliced
2 onions, sliced
1 teaspoon salt
1 teaspoon pepper
1/4 teaspoon red pepper flakes
1/2 teaspoon oregano, fresh or dried
1/2 cup chopped basil, fresh or dried
4 garlic cloves
2 tablespoons tomato paste
1/2 cup wine or beef broth
1 15-oz can diced tomatoes
Sandwich rolls (optional)
Brown sausages in a little oil in a large skillet (about 7-10 minutes). Remove from pan. Add peppers, onions, salt, pepper, and pepper flakes and cook over medium-heat until slightly brown (about 5 minutes). Add oregano, basil, and garlic and cook for about 1-2 more minutes. Add tomato paste and stir. Add wine/broth and tomatoes, stir, and bring to simmer. Cut sausages into 4-6 pieces each, add back to pan, and stir to combine. Cook mixture until sauce has thickened (about 20-25 minutes). Serve in bowls or in rolls.
