Love pumpkins as much as this guy?

Then make the most of this seasonal squash by eating the inside as well as the out. There's some great recipes floating around CafeMom, including one for roasted pumpkin seeds by MissiHampt and one for pumpkin seeds with cinnamon and salt by 080583heather.

For something a little different yet still a cinch to make, Real Simple has a recipe for spiced pumpkin seeds. Just remove the seeds. Spread on a cookie sheet. Bake at 300 degrees until dried (about 1 hour). Toss with one tablespoon olive oil, 1 teaspoon celery salt, and 1 teaspoon ground cumin in a skillet until toasted.

I've also heard this works with crushed red pepper, garlic powder, or cardamon.
