Easy Spinach Salad With Citrus Vinaigrette

Kim Conte

orangeOranges were on sale this week so I made one of my favorite go-to salads: Spinach Salad With Citrus Vinaigrette by Food Network's Giada De Laurentiis (love Giada!!).

It's really easy to throw together, and only requires a few ingredients. Plus, you can use whatever citrus fruit you find in the grocery store—oranges, pink grapefruits, blood oranges, etc.

Spinach Salad With Citrus Vinaigrette from Everyday Pasta by Giada De Laurentiis

For Salad

1 10 oz bag of spinach

2 oranges (or other citrus fruit), cut into segments (I like to use a sharp knife to cut away both the peel and the white pith from the fruit. Then, holding the peeled fruit in the palm of my hand, I cut on each side of the membrane to free each segment.)

1/2 cup sliced almonds, toasted (optional)

1/2 red onion thinly sliced

For Citrus Vinaigrette

1/4 cup oil (preferably olive oil)

2 tablespoons freshly squeezed lemon juice

1 tablespoon freshly squeezed orange juice (or whatever other citrus fruit you are using)

Zest from both lemon and oranges

1 teaspoon honey

1 teaspoon thyme, dried or fresh

1/2 teaspoon salt

1/4 teaspoon pepper

Combine all ingredients for vinaigrette, except oil and cheese. Whisk in oil until well combined. Combine salad ingredients. Toss with dressing. Top with grated Parmesan.
