Guess what I had for breakfast this morning? Homemade banana bread, fruit, and hot tea...the perfect way to start off my Monday morning!


I decided to make banana bread after looking at the bunch of bananas decomposing in my fridge. (Oops, didn't get to those in time.) But I wanted a recipe that would be healthy enough to eat for breakfast. I like this one, which is very hearty and rustic, because it involves so few ingredients. Plus, it doesn't have any butter or oil, and only calls for 3/4 cup of brown sugar or a combo of honey and molasses if you are so inclined. I also added some flax for added fiber.

Healthy Banana Bread (ever so slightly) Adapted From

3 ripe bananas

2 eggs, beaten light

2 c. whole wheat flour

3/4 c brown sugar, or slightly less honey or honey w/ a little molasses

1 tsp salt

1 tsp soda

1/2 c. chopped walnuts

2 tablespoons flax seeds (optional)

Mash bananas. Add eggs. Stir in dry ingredients. Bake in greased loaf pan at 350 for 40-60 minutes, depending on size, until toothpick inserted in center comes out clean. I made three mini loaves, and they took about 40 minutes to cook.
