A sick husband and new puppy that's into everything have made this week something of a disaster. Therefore, please forgive me, but I didn't have a chance to cook a one-pot meal—or anything for that matter! In place of a recipe, I'd thought I post a helpful guide on where I find thousands of great one-pot recipes!
My favorite One-Pot Cookbooks include:
- Glorious One-Pot Meals: A Revolutionary New Quick and Healthy Approach to Dutch Oven Cooking ($12.21), by Elizabeth Yarnell: This seminal one-pot cookbook is a must for the one-pot chef.
- Fix-It and Forget-It Lightly: Healthy, Low-Fat Recipes for Your Slow Cooker ($10.85), by Phyllis Pellman Good: When I'm feeling unhealthy, I grab this cookbook off the shelf.
- Pillsbury: One-Dish Cookbook: More Than 300 Recipes for Casseroles, Skillet Dishes, and Slow-Cooker Meals: You can buy this one used on Amazon.com for only $0.69. Three hundred meal ideas for $0.69? What a deal!
- Tom Valenti's Soups, Stews, and One-Pot Meals: 125 Home Recipes from the Chef-Owner of New York City's Ouest and 'Cesca ($25.50), by Tom Valenti, Andrew Friedman, and Mario Batali: I've had my eye on this one for a bit. I can't bring myself to splurge, but I'm hoping maybe someone named Mr. Cafe Kim will get me this as a gift (hint hint!).

This is great thank you! I don't know which one makes me feel worse for you....the sick hubby or the puppy! I know how time consuming they both can be! Although......I saw a picture of your puppy and he is pretty cute! Hee hee -- Any way, good luck with both!
CROCKPOT SAUSAGE, PEPPERS & ONIONS (My Favorite)
Prep Time: 20 minutes
Cook Time: 6 hours,
Ingredients:
Preparation:
Cook sausage in heavy skillet over medium heat until browned, turning occasionally. Layer half of the onions on bottom of 3-4 quart crockpot, then add half of the peppers. Add all of the browned sausage, then the rest of the onions and peppers.
Add diced undrained tomatoes, tomato paste, and red wine to skillet and and cook over medium heat for 2-3 minutes, stirring to loosen brown bits on bottom. Pour over mixture in crockpot. Cover slow cooker and cook on low for 6 hours. One hour before mixture is done, add Italian seasoning and pepper to crockpot and stir well.(I ADDED THE SEASONINGS & PEPPER AT THE BEGINNING AND COOKED FOR 7 HOURS ON LOW) Cover and cook one more hour until sausage is thoroughly cooked and vegetables are tender. I serve this over rice or with cornbread. Serves 8
Honey Pineapple Chicken
Ingredients:
Directions:
In a skillet, brown chicken in oil in batches on both sides; transfer to a 5-qt. slow cooker. Combine the remaining ingredients; pour over chicken. Cover and cook on low for 3-4 hours or until chicken is no longer pink. Strain pan juices, reserving pineapple. Serve pineapple over the chicken. Can be served over rice. 12 servings.
