Pulled pork on a bun
The relentless cold weather had us in the mood for barbecue, so I whipped up these tasty pulled pork sandwiches in the crock pot. This recipe is so cheap and easy to make—I was surprised at how few ingredients it required.
Pulled Barbecue Pork from Fix-It and Forget-It Lightly
2 pounds boneless pork top loin
1.5 cups onions, chopped
1 cup diet soda (I didn't have soda in the fridge so I used beer)
1-1.5 cups cup low-sodium barbecue sauce
Place pork in slow cooker. Combine all other ingredients in bowl and pour over pork. Cover. Cook on high 4-6 hours or until meat is very tender. Shred pork with two forks. Stir back in sauce. Serve on buns.

YUM! I love pulled pork, but never knew how to make it. I will have to try this ... with the beer of course!
