Spaghetti & Meatball Grilled Cheese Is the Perfect Combo for Kids (and Grown-Ups!)

There's just something about comfort foods that makes you -- and the kiddos -- want to chow down on them over and over again. But if you're looking to add a new twist to some old favorites (whether it be for a birthday party or tomorrow night's dinner), it's time to push yourself that extra mile further. Sure, you love spaghetti and meatballs, and there's nothing like the satisfying crunch of biting into a freshly made grilled cheese sandwich. But what if the two existed together?  


That's where the spaghetti and meatball grilled cheese comes in.

We recently caught up with Today show food contributor and blogger at Siriously Delicious, Siri Daly (yes, she is also Carson Daly's wife), at Wet Ones' "Let's Get Messy" event this month. She came up with this savory recipe combo that she makes all the time for her kids, and we're low-key obsessed.

The recipe makes about six scrumptious sandwiches and is definitely worthy of becoming a dinner staple that the entire family will love.

Here's what you'll need:


  • Meatballs (makes approx. 25)
  • 1 lb. ground turkey
  • 1 large egg
  • ¼ cup grated Parmesan
  • ¼ cup bread crumbs
  • 1 cup cauliflower crumbles
  • 1 Tbsp fresh parsley, finely chopped
  • 1 large garlic clove, minced
  • ½ tsp salt
  • ½ tsp
  • ¼ tsp nutmeg


  • 1 lb. spaghetti
  • 1 24 oz. jar marinara


  • Sliced bread of your choice
  • (12 slices)
  • Sliced mozzarella cheese
  • (12 slices)
  • Mayo or butter  


1. Preheat oven to 400 degrees. Add all meatball ingredients to a large bowl and stir (you can use a wooden spoon, but your hands work, too!) until combined, being careful not to overmix.

2. Roll the meat into golf ball–sized rounds and place on a lightly greased baking sheet. Bake for 20 minutes.

3. While meatballs are baking, bring a large pot of water to a boil. Season with a generous pinch of salt, and add spaghetti. Cook on high for 11–13 minutes, then drain. Add spaghetti back to pot with marinara sauce, and stir to combine.

4. To assemble sandwiches, spread mayo on outer sides of bread. To layer, begin with bottom piece of bread and then add a slice of cheese, a heaping of spaghetti and meatballs, another slice of cheese, and the top piece of bread. Cook on a skillet, making sure to flip halfway through, until the cheese melts and the bread gets toasted golden.

*Notes: If you cannot find cauliflower crumbs, take 1 cup of cauliflower florets and process in a food processor or blender until it resembles crumbs.

The great thing about this yummy entrée is that you can adjust the recipe. To shorten cooking time, try adding frozen meatballs. And you can also adjust the ingredient list to fit whatever dietary needs work for your family -- like replacing the spaghetti and meatballs with veggie alternatives.
