Curried chicken with chickpeas and citrus coleslaw

If you close your eyes, you just might be able to picture yourself on a much-needed vacation. Are you on an island? Can you feel the warmth of the sun on your face? Sadly, you can't just blink and jet set to a destination of your choice, but hey, we can at least bring some Caribbean flavor to you with this fantastic chicken dish.

Even if you never thought about eating coleslaw, legumes and chicken on the same plate, at the very least, you need to try it. And trust us, this coleslaw is worth it.

It's pretty damn tasty, and, if you needed more convincing, it takes less than 30 minutes to make.

Curried Chicken With Chickpeas & Citrus Cole Slaw (adapted from the recipe on FoodNetwork.com)

Ingredients
(Curried chicken with chickpeas)

  • 7 skinless boneless chicken thighs*
  • Salt and pepper to taste
  • 2 tablespoons oil
  • 2 tablespoons ground cumin
  • 2 tablespoons ground corriander
  • 2 tablespoons ground ginger
  • 1 tablespoon ground cinnamon
  • 1 tablespoon garlic powder
  • 1 tablespoon ground tumeric
  • 1 15-oz. can chickpeas (keep the juice)
  • 1 cup fresh cilantro, chopped

*Note: You can use breasts if you want.

(Citrus cole slaw)

  • 1 bag cole slaw mix
  • 1/3 cup lime juice
  • 1/4 cup apple cider vinegar

Directions

1. Mix cumin, corriander, ginger, cinnamon, and tumeric in a small bowl. This will serve as your curry powder.

2. Using a Dutch oven, heat oil on medium-high. Season chicken with salt, pepper, and garlic powder. Add to the pot and cook, on both sides, for five minutes or until brown. Stir in curry powder mix, chickpeas (use the liquid from the can), and cilantro. Cook for 15 minutes.

3. To make the citrus cole slaw, mix bag of cole slaw, lime juice, and apple cider vinegar together in a large bowl. Season with salt and pepper.

You can serve the curried chicken and chickpeas as is. (Heaven knows picky eaters can really give it to you.)
