Dinner for $10 (or Less): Savory Slow-Cooker Jerk Chicken That's Super Delish

Everyone, stop what you're doing and come close to your screen. Closer. (There's no scary ghost face that will jump out at you, I promise.) You see this chicken? Doesn't it make you want to find a plate and napkin, so you can properly chow down without folks seeing you lick your fingers? Hopefully, friends, that answer is yes.

Truth be told, there are endless ways to prepare chicken -- to the point of becoming monotonous. That's why you need to switch up your recipes from time to time, and my, will this jerk chicken do it for you.

While it does require a few extra steps, it's soo worth it.

Savory Jerk Chicken (adapted from the recipe in Bon Appétit)

Ingredients

  • 1 tablespoon cinnamon
  • 1 tablespoon cloves
  • 1 tablespoon rum (optional)
  • 1/2 tablespoon all spice
  • 1/2 tablespoon nutmeg
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon (smoked) paprika
  • 1/2 teaspoon garlic powder
  • 1/3 cup oil
  • 1/4 cup malt vinegar
  • 1/4 cup lime juice
  • Salt and pepper to taste
  • 5 quartered pieces of chicken (you can purchase a pack from the store)
  • 1/3 cup chicken stock

Directions

1. In a small bowl, mix the first 11 ingredients together. Set aside.

2. Meanwhile, turn your slow cooker on low. Add chicken stock. Once hot, insert quartered chicken and season (both sides) with salt and pepper. Add spice mixture from the small bowl, making sure each piece of chicken gets coated. Cook on low-heat for four to six hours.

3. Coat grill pan with non-stick spray and heat on medium-high heat. When hot, carefully add chicken and sauce from slow cooker. Cook on each side for about 10 minutes.
