Mediterranean Chicken & Lemon Orzo

The summer heat can be absolutely unbearable, which is why it's great to have a tasty recipe that brings the flavor without turning up the heat. And, should it be a dish you can make in under 30 minutes, well, that is just plain awesome.

Let's be honest here: There are many days when we don't feel like cooking. It's hot. I'm hot, and don't want to slave over a stove. This is one of the reasons why I'm so thankful for random cans of soup in my pantry.

(Yes, soup.)

Now, the thought of eating something that keeps you warm during winter might not sound super appetizing in summer, but it's actually a great base for a really delicious meal.

Mediterranean Chicken With Lemon Orzo

Ingredients:

  • 3 skinless boneless chicken breasts, chopped
  • 1 18.6-oz. can of Progresso Chicken & Orzo With Lemon soup
  • 2 tablespoons ground cumin
  • 1 tablespoon oil
  • 1 tablespoon parsley flakes
  • 1/2 tablespoon lemon juice
  • 1 teaspoon red pepper flakes
  • 1 teaspoon paprika
  • Salt and pepper to taste

Directions:

1. Season chicken breasts with salt and pepper.

2. Heat oil in a skillet on medium-high heat. Once hot, add chicken and cook for five minutes -- or until brown. Repeat on other side. Remove from heat when done, and chop once cool.

3. Heat can of soup in a skillet on medium-high heat. Season with salt and pepper, and allow to cook for five minutes.

4. Reduce to simmer and add chopped chicken. Season skillet with cumin, red pepper flakes, paprika, parsley flakes, and salt and pepper. Stir generously.

5. Cook chicken and soup mixture for 10 minutes.
